McCain To Make Your Meals Special - Recipe Inside!

I do very little food posts here so yes this might seem a bit out of place for those who are still new to the blog. Food has its own beauty, beauty in its flavours and benefits.

I am a hard core junk food lover, so much so that I can eat chaat, tikki, pizzas as a replacement to my meals. But, I know we all should eat sensibly for a good and sound health. So I try and combine a bit of both.

This Rakshabandhan me and my brother (and my sister and all our cousins) had a fun day together. We ate so much during the day that for dinner that day a light meal of bottle gourd was prepared. Both me and my brother detest eating the bottle gourd. We were searching through our fridge to get hold of something better tasting when we saw a pack of finger licking yummylicious Veggie Fingers from Mc Cain. Dinner was already prepared, chapati with bottle gourd. If we wanted to eat those veggie fingers we needed a clever way to combine it with our bottle gourd. That is where this do-it-yourself reuse leftovers sort of idea clicked.

We cooked up - A Bed of Rice With Bottle Gourd Veggie Fingers.

A Bed of Rice With Bottle Gourd Veggie Fingers

Here is a quick way of sprucing up any vegetable or daal that you have left over (or that you don't feel like eating but you have to because its good for you!)

Prep Time: 5 minutes
Cook time: 5 minutes
Ingredients
  • 4 pieces of Mc Cain Veggie Fingers
  • 1 cup cooked rice
  • 1 cup bottle gourd cooked (can replace with any other vegetable or soup) 
  • Any salad (tomatoes, basil, chopped onions whatever you like) 
  • Oil for frying
Instructions: Preheat the oil and fry the Mc Cain Veggie Fingers until golden brown.

Soak them out on a kitchen towel to remove any excess oil.

In a bowl place some warm rice.

Cover the rice with any vegetable that has a bit of gravy. I used bottle gourd.

Now top this with the veggie fingers covering all the vegetables. Place a flower cut out of a tomato and a basil leave in the middle. Your one pot dish is ready to be savoured.

To add more masala to the dish you can accompany the salad with some dressing of mint and curd as well. This dish can be given so many different variations based on the vegetables you use. The softness of the rice and vegetables is juxtaposed very well against the crispiness of the veggie fingers. If you try this out do share your own version of this dish. This is also a good way of hiding nutrient rich vegetables in your kids tiffin.
